Have now made three batches of these baguettes and they are as authentic as you can get, we have lived in France and this bread is just like popping into a baker in Paris. I guess they should do as it is a top class Parisian recipe. I even bought a 25 kilo bag of French flour which really helps, the 75% hydration means it's a wet dough but I throw the dough until it becomes much firmer recommend this recipe to anyone.
