Can I do this for a substitution in a whole grain loaf? I do not have oat groats and don't know if I can find them locally but I do have steel cut oats. They are required in the soaker part of the recipe. Thank you for your thoughts.
Yes. The texture will be minimally different and soaking time will be slightly less, but I would not make any changes until you get the results of a first pass.
