This bread is from a recipe of Baking by James Peterson.
Easy bread to make. I did not do a pan loaf as I like a nice full crust.
Very moist crumb and a crispy crust. Baked on a Stone. I sprayed with water 3 times 30 second intervals. Enough oven spring so that it did not explose.
Nice height on the cross section, there. Did the recipe use a poolish?

Thanks for the nice comment. No I used commercial yeast. I used 1/2 the amount for a longer rise. Had a nice flavor last night fresh. This am had some for breakfast toasted was good. Will try french toast sunday. I froze 1/2 of it so it should be intersting. If you want the baaic r let me know. Very simple bread.
