Sourdough discard muffins

I made sourdough discard muffins with raspberries and blueberries this week and they were really good! I used this recipe: https://thegingeredwhisk.com/sourdough-blueberry-muffins/

The crumb topping was a bit much so I left it off the second batch and preferred that. 

I've been making sourdough for a couple of years but it was my first time making anything with the starter discard. Does anyone have any favourite discard recipes to recommend? Thanks!

My wife makes muffins all the time, but never with my starter discards.  The discards are all reserved for pancakes and/or waffles.  My starter is a 100% hydration (home milled) whole wheat starter, and I keep a very small amount (35gms), so discards build up very slowly (30 gm per feeding).  I don't have a recipe but putting it together on the fly, it would look something like this:

2 cups starter discards stirred with enough water to loosen it up
1/4 Cup (scant) vegetable oil or melted butter
1 large egg
1 tsp salt
1/4 Cup sugar (optional, but it helps them brown better)

Mix all the above thoroughly, with enough extra water as needed to get "the right" viscosity.  We don't like our pancakes "potholder thick", so I make my batter looser rather than heavier.  It depends on your tastes and preferences.

Lastly:
Dissolve 1/2 Tablespoon Baking Soda in scant 1/4 Cup warm water

Stir the baking soda and water into pancake batter and watch the 5th Grade Science Fair volcano effect. The batter will foam up slowly because of the acid and soda reaction.  How much depends on how acidic your discards are.  Mine tend to be quite acidic because they accumulate in the refrigerator over some weeks between batches of pancakes.

Stir down the foam a few times, then cook pancakes on a hot griddle till done.  Serve with your preferred pancake/waffle toppings.  My wife eats them with no topping at all about half the time because she so loves the flavor.  I prefer natural maple syrup.  To each their own.

This is, by far, our favorite recipe for starter discards!  If you love pancakes you should try this one, or one like it.

):  There's no extra; only pancakes in waiting!  I don't make pancakes in order to use discards.  I make discards so I can make pancakes!  You should try it.  You might like it!

I'm super new to SD, but I've made The Perfect Loaf's Best Sourdough Pancakes twice and really enjoyed them. I made them with Lindley Mill's Super Sprout Flour so I had to add some more milk after they rested, but my kids really enjoyed them. I will say that I thought whisking the egg whites was a bit extra- I've never done that for pancakes before and you could probably skip it without diminished quality. They freeze and reheat well too, good for kiddo breakfasts without a ton of fuss. 

Loads of other pancake/waffle discard recipes out there if that one seems too fussy! I've also heard discard crackers are supposed to be good and relatively easy to make.
