475 G KAAP
25 G KAWW
10 Salt
1.5 G Yeast
1 G Malt
380 G 78 degree H2O
25 G Honey
mix and rest for 30 mins
S&F 3 times with hydration - 30 mins between each
refrigerator for 16-21 hrs
pre shape and rest 30 mins
shape and rest 20-30 mins
cook with steam at 480 for 10 mins
reduce heat to 400 turn 180 degrees and cook another 12-13 mins
