Is my crumb ok (weird bulk story) pleasseee help!
Hi guys! I’ve just got a new cookbook, and tried out a new recipe. The weird thing is is that it only required two folds during the bulk fermentation. Usually recipes call for 4, so I was confused. Anyway, I followed the recipe and everything was ok, but then when I came to score it it literally deflated, and became almost like a flat pancake, but then I baked it, and was shocked when it grew in the Dutch oven. This is all confusing :( . Here are some pics of the loaf.
