Two cobble stones & one pillow

Ouch! 1 for 3, not a good average. Two cobble stones & one pillow.
Sometimes you eat the bear, sometimes the bear eats you.
The bad mojo started last night when I over worked my whole wheat loaves in the Bosch. The dough was coming together nicely, then I got side tracked stretching and folding The Maltese bread, converted to sourdough formula.
The next thing I knew, the dough fell apart into a sticky mess!
This morning I did not soak the the kitchen towel with enough water before I put it into the 500 F oven to create steam. ( I do this all the time no trouble) Anyway, it's not good when the building engineer, wakes up the whole front side of the building to a smoke condition! The last photo is what my whole wheat bread usually looks like.

While I achieved zero oven spring, they are far from bricks and very tasty indeed!
