Q: recipe without significant proofing?

Q: recipe without significant proofing?

Once again, I am puzzled by a Ankarsrum recipe:

Is it just me, or there basically no proofing? The only significant time passages are:

• for the sponge: "cover over the bowl and allow to rest (sponge) for 10-15 minutes"

• after mixing in the remaining ingredients: "cover on the bowl and allow to rest for 10 minutes."

Then shape and bake.
