If you have never tasted Vietnamese cinnamon, you owe it to yourself to give it a try. It is a superior product.

Humm, maybe cinnamon could be worked into our 123 Community Bake that will start this weekend. Any ideas?

Update - I just heard from Flo, the author of the 123 SD. She gave me the scoop about how the, now famous” formula came into existence. You’re going to enjoy that story :-)

Real cinnamon. Much healthier for you. The fake cinnamon is easy to differentiate from true cinnamon when you're buying cinnamon sticks. Cassia is hollow and tough to break. The inside of True cinnamon, zeylancium, looks like the crumb shot of a lovely croissant and is easily snapped in half. Ground the true cinnamon is lighter and more aromatic. Cassia is darker and more pungent. Cassia is more common because it's cheaper.  Some are trying to push for different names.

is a great place for all spices, including cinnamon. Its family owned and very well managed. We completely switched over all our spice purchases to Penzey's yeas ago because they are always flavorful and fresh. If you go to one of their stores then you can smell/taste everything from their sample jars. Just walking around the store and smelling all teh spices is equivalent to a day at the spa because its relaxing.

Ground Ceylon and Saigon cinnamons. I don't think I can distinguish between the sticks.  Too confusing to me.

Are both true cinnamon. They aren't cassia.
