I should know better!
Yesterday I made a classic mistake by not being patient with a loaf of bread that would've been delicious if I had just given it enough time proofing!

And it was a recipe that I have been making for 25 years. but I was preoccupied by holiday cookie baking. And I just was not giving the loaf the love and attention it needed. So I posted this a a reminder to myself as to what happens you are watching the clock rather than the dough !
I know it will be better next time. Just relax and have patience... :)
I feel very silly/embarrassed/ashamed when I make careless careless mistakes and the loaf doesn't come out perfect! I have been eating it toasted for breakfast
it cures (nearly) all ills. Of course, I've never done anything like that myself ...
