Poolish wheat flour W360 200 g
Water 200 g
Fresh yeast 10 g
Wheat flour 400 g
Water 220 g
Salt 13 g
Fresh yeast 10 g
Bulk fermentaion 90 minutes final proof 90 minutes
Very light, soft inside and crispy outside

Crust and crumb are perfect! I see summery picnics just by looking at these beauties.
For perfection there is still long way to go :-)
