Question about duram

i have whole Duram that's I've had for quite awhile in a 25 lb bag. I grind with a Whispermill. If I grind this will it work for semolina or will it be Duram flour? Or, can I do either based on the fineness of my grind?

I'd like to try some homemade pasta as well as some bread recipes with it.

we get it ground from Breadtopia. We use it 2/3 durum and 1/3 white unbleached AP. My husband is the " pasta" man and he puts the durum though our sifter first to get out the hard bits which will shred the pasta. He adds those  bits back to the bag and I use it as is in my breads. The pasta is wonderful when made this way !! It is a RICH yellow color and cooks to a lovely creamy ivory and texture is 2nd to none. You do not need anything other than this to make excellent pasta. We have been doing it for over 40 years with various combinations and this is the best yet. c
