Urgent help - kneading
I have just made some hot cross buns but, being hassled by grandchildren (I really do love them most of the time!), I forgot to proof them before shaping them. They have been proofing for about 30 minutes and are rising quite well. Is there anything I can do now or shall I just bake them with just one proofing and hope for the best?
Just saw your plea for help. I imagine they're in the oven by now. Those grandchildren will think they're delicious I'm sure. I would have said go ahead and fire them when the dough feels ready (poke test) and think of it as an experiment.

The texture left much to be desired but the taste was great. They were all eaten although the last few were eaten by the birds. After decades of baking, it's the first time I've ever done that. Reminder - don't bake when grandchildren are around!
