I'd like to see one of those guys bust out their forearm-seam-sealing technique at a French baking class. By the time the teacher had time to reprimand them, he'd have made 57 baguettes. You could tell the guy scaling the dough had done it once or twice before.

That was amazing. When I saw that the video was over seven minutes long, I didn't think I would watch the whole thing. I found myself unable to look away. It's mesmerizing.....

That's great! Those double doors lead to the proofing box/room!!?? The tag on the side says these guys process 500lbs of dough every 20 minutes. Is that possible... even with the two handed shaping - cool.

...I did come digging, have some good friends down there.
They are using water soaked Palm leaves to split the loafs as they expand in the oven.
That is a very interesting method.
According to them this method dates back to the early Egyptians.

I'm shaving both of my legs, forming one baguette in each hand, then jumping onto the table and flattening them with my shins. While I'm flattening them with my shins, I can preshape the next two with my free hands, jump over to them while spinning, final shape the first two, you get the picture. Or maybe you don't want to get the picture.

My geeky wife had to explain to me what the tech term 'Easter egg' means. She wholeheartedly agreed with you.

Once again, my job gets in the way of my hobby. I'm at work, so I can't stream the video. All of your comments about how awesome it is make me think I should take a half day, so I can go home and watch it!
Edit: Home now, and I watched it. Amazing!! I wonder if I could go work there for a few hours.
I think we'd all like to volunteer as cheap labor there for a day or two. Truly amazing.

You will need to watch it numerous times to pick up all of the naunces of the operation. I have never seen huge chunks of dough and thousands of loaves of bread like that in my entire life!

It's a high of 17 today in Philly, I want to be in Florida. I love the picture of the front counter, the mountains of bread with the fans blowing on them. You can probably smell that bakery from a mile in every direction.
I'd love to know their daily output. That video was facinating to watch..thanks.

You misunderstood completely. The preshaping/final shaping is done with my hands, the seam sealing is done with my shins. The feet stay out of the picture and remain covered with socks and shoes. What, do you think I am, uncouth?
And by the way, my toenails are clipped anyway.

I can't helpo but wish they were wearing elbow length gloves. All food handlers should be wearing gloves these days. Their stations looked very clean at least.
My favorite was the fench baking video. One young baker using a sheeter, making croissants,etc
