Ingredients

2 c
all-purpose flour
1 T
granulated sugar
  t
baking soda
1 t
salt
  c
cold unsalted butter (cut into small pieces)
  c
cold buttermilk
  c
cold whole milk
2 T
Melted butter ((for brushing))

Instructions

  1. Preheat Oven: Set the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

  3. Incorporate Butter: Add the cold butter pieces to the dry mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces.

  4. Add Liquids: Pour in the cold buttermilk and whole milk. Stir gently with a spatula until the dough just comes together; it will be slightly sticky. Avoid overmixing to ensure tender biscuits.

  5. Knead Dough: Transfer the dough onto a lightly floured surface. Gently knead it 2-3 times to bring it together. Pat or roll the dough to a ½-inch thickness.

  6. Cut Biscuits: Using a 2.5-inch biscuit cutter, press straight down into the dough without twisting to ensure proper rising. Gather any scraps, re-roll, and cut additional biscuits.

  7. Bake: Place the biscuits onto the prepared baking sheet, spacing them about 1 inch apart. Bake in the preheated oven for 25 minutes, or until the tops are lightly golden.

  8. Finish: Remove from the oven and immediately brush the tops with melted butter. Serve warm.

Notes

  • Keep Ingredients Cold: Ensure that the butter, buttermilk, and milk are cold to create steam during baking, resulting in flaky layers.

  • Avoid Overmixing: Mix the dough just until the ingredients are combined to prevent tough biscuits.

  • Proper Cutting Technique: Press the biscuit cutter straight down without twisting to allow the biscuits to rise properly.

  • Storage: Store any leftover biscuits in an airtight container at room temperature for up to 2 days. Reheat in a preheated oven at 350°F (175°C) for 5-7 minutes to refresh their texture.
