A lighter shade of pale

Small loaf, only 740 grams after baking. I purposely made the crust light for wifey who dislikes the traditional sourdough loaf with dark, crispy crust.

Love the appearance.  But could that weight be a typo for "470g"?  It seems very small for 740g.

It's a dense little loaf, partly because of my less-than-expert technique and partly because I pulled the loaf when the internal temp broke 200°F. But it's fully baked and tends to stay fresher longer. 20 minutes covered, 15 minutes sitting on the oven rack, all at 450°F. The other factor in the light crust is the Dutch oven I used, enameled cast iron with white interior.

I love that crust colour! Is it still crispy, though?

But it's chewy, a little, and can be crisped a bit by putting it in a preheated oven for a few minutes before serving. Me? I like the crust dark and crunchy like perfectly normal people do. It's a sacrifice I make for SWMBO. Happy wife...but you know the rest.   😎
