Whole wheat sourdough

I’m using Reinhart’s Whole Grain Breads to make some whole wheat sandwich bread. I have sourdough starter, not wild yeast starter from the Reinhart book. So do I really need to use 339 grams of starter (instead of 339 grams of biga)  in the 952 gram final dough?

Use it and see what happens. Enjoy!

I'm curious about the difference between your sourdough starter and Reinhart's wild yeast starter. The wild yeast starter is what most of us here would call sourdough starter. Is your sourdough starter made from commercial yeast or is it something else?

It is 100-year-old Alaskan starter that I’m feeding whole wheat.

In that case, your starter is the same as what Reinhart calls wild yeast starter. You can add an equal amount of your starter as the biga called for in his recipe.
