new machine does 50% wholemeal
I recently engaged with Lance (albacore) about his lovely dough machines and mentioned that i had purchased a new machine so here is a little bit about it and its maiden effort..
A second present that i treated myself to arrived yesterday afternoon, it was a week earlier than i was expecting . It is a Chinese noodle dough machine, This one is from Sydney rather than the long wait from China, and significantly cheaper @ $129. The postage from China was more that the advertised price of the machine direct from China.
The machine was removed from its packaging and inspected and all good. the instruction booklet unfortunately is only in Chinese, so i have requested the English version from the supplier.Despite the heat i knew i was going to have to give it a test runi will put the link up at the end of the post and you can see the machine from the ebay page rather than me posting pictures of it. I decided to make a 1 kg dough with the view of turning that dough into 2 x 500g loaves. and here they are 50% Wholemeal with cousin Ray's failed stout making effort, which was over gassed but that's another story making up the liquid content and the lovely brown colouring. I was happy with the machines work, its action is similar to a bread maker but it doesn't do the baking although it does have a heater that will maintain the temperature for proving. In the dough that i formulated it was going to be an extended slower bulk fermentation period as i was using 2% fresh compressed yeast 5 hours in fact. My dough was fermented in a bowl not the machine. The final proof after shaping was 1 hr and 40 minutes and baking time was 40 minutes with terry towel steaming aid for the first 15 minutes. I managed to do something i have avoided for a while and that was to burn my thumb turning the baking tray around. my thumb was in cold water for the rest of the bake and once concluded i used some aloe vera from the garden which was very soothing. Bed time beckoned and was acknowledged and this morning in the glorious pre dawn cool of the morning and before the relentless sun applies the blow torch for another day i have sliced and eaten the two slices of a very nice brown bread. The 5 hour BF has probably added its attributes to what is a nice loaf. You might also see in the pictures the clean lines of the scoring with my new lame, it worked a treat and felt balance in the hand and even with the rolled Rye Flakes adorning the dough did a great job. Overall the dough machine has done a great job with dough development. the flours used were the Bakers flour from the bulk bin and Millers wholemeal in the 1 kg bag if you would like me to post the recipe for the 1 kg dough let me know. ebay USAhttps://www.ebay.com/itm/404118085058?

The shipping is way more than the price.
yes that was the same here then i continued on ebay and found there were local distributors where there was free delivery and it was here in two weeks rather than 12 althoughthe machine price was abit higher it was the freight that was more than the machine

Searching for bear dough mixer was the key.
It's been about 18 months. How do you like the Bear dough maker?
Hi Gary WOW 18 months already ! Time flys when you are having fun or certainly does as you get older. the dough Noodle maker has been brilliant, i do a mobile baking class and its been a god send as its east to take along, We usually do a hand made dough and one in the noodle maker or in whatever machine the person has and might want to use, the whole idea is that im there as a guiding hand in the comfort and familiarity of their own kitchen.
i have been to some magnificent homes and kitchens and met some really nice people. i have also been to a country Hotel and stayed 2 nights and baked in the main kitchen Interestingly that owner has since upgraded mixer and ovens and i look forward to going back there for a look see.
i have had at least two people buy Noodle dough machine for themselves after seeing mine in action.
Funny enough i am expecting a new machine any day soon its a spiral mixer a cheaper entry level chinese one, its the same brand as the honey spinner i recently purchased and was very pleased with that.

I have been doing some work for The Lupin co here and during my visit to the milling facility David reminded me he was wanting me to work out payment for the recipes, time and test baking of those breads and i suggested that the mixer was on my wish list that i probably couldn't justify splashing out on. David didnt flinch and its been ordered, of course it will be able to further expand the lupin bread trials too, and the machine purchase is tax deductable . win win !
The Noodle dough maker will still be used and especially for my bake day classes which is about 1 a month or so, and i do get a great deal of enjoyment out of doing those. They are designed either as either 1 on 1 or for a couple i have group of 3 and 4 group but size of kitchen bench and oven space becomes an issue,
I take along just about everything else that is required, Ingredients, custom recipes and formulas, Bannetons, couches, lames, thermometers, tins trays clay baker etc etc tips and tricks of the trade. All in all 6 hours of tuition, hands on fun often topped off with a glass or two of some nice wine during the taste testing and review at the end of the day.
If you weren't on the other side of the world I'd love to try it.
