For me, the guy is working backwards from products: what happens when product X added? product Y added?
I would find it more helpful to have a chart that works forwards from concepts, such as % water, % fat, % sugar, and effects of emulsions and creaming, and then based on what you want to achieve, you can select products that add up to those %.
For instance, you might add an egg + water. Or a oil + water. Or mayonnaise. Etc.
After watching, it seems less interesting than the egg one, because the effect is much smaller.
