How much light your bread is
I use whole wheat flour(aashrivaad sharbati atta), protein is listed 10.1%, I calculated it's around 2x lighter compared to water. How much rise does non-bran flour get? btw I use sourdough for fermentation(around 200% hydration starter(which I think should be slightly higher))
Have never used more than 50% atta in a bread and have always used other 'sifted' flours to make up the bulk of the flour in my recipe. Find that gives me the best rise and a 'lofty' lighter bread.
