Approachable loaf

I have to tell you guys, I am really liking my my rendition of the approachable loaf!

1/2 cup home milled coarse grind flour, 1/4 tsp baking powder, eyeballed  1/16th tsp instant dry yeast, 1/8 tsp salt. Eyeballed the water, maybe 75-85 %.  It was sticky and loose  until it got well absorbed. Let sit 2.5 hours at room temp.  

Formed into two pieces, just under 1/4" thick.  deep fried in 400 F oil, letting the dough immediately  cool the oil to 375 F desired/target oil temp.  Used a hand held needle style instant read thermo on the oil.

Cooked until bottom was well browned, flipped and cooked  until other side was browned, maybe 2 min maximum, but I did not watch clock.   Brought oil back up to 400 F before starting the 2nd piece,

Used a wok, and a mish mash of oil: Crisco, peanut, oilive, coconut, palm.

Could have used some sugar and milk in mix, but didn't.   Need to dip this plain bread in syrup or honey, but don't have any.

This works as well with powdered sugar as it does savory with an egg!

Sauerkraut on frybread is a street festival favourite around here.  Often the middle is deflated before frying. A donut type dough slightly sweet is ideal.  (Close your eyes and pretend you're on the street in a crowd.)  Mmmmm.
