Cristal Bread
So decided to dive right in and give cristal Bread a try. Not sure if I got it but damn this bread is tasty. Crispy, light and just the right amount of chew.

I have seen this bread made by others on my FB groups and your crumb looks pretty close. I know this is a very high hydration dough and takes some practice to get it perfect, but you are certainly well on your way. The crumb looks great. The shaping with this type of dough can be challenging, but practice makes perfect and tastes great :)
