Are you maybe thinking of loaves that proof in a basket or banneton made of cane? They will often produce the kind of pattern you are describing.
That could very easily be it, if the loaves are placed top-down in the banneton and then baked pattern-side-up. It certainly makes more sense than what I was imagining. ? I've never used a banneton before.

Exactly! The (often flour-laced) pattern that those leave on the bread was what I was talking about. Thanks for the clear picture.
