LAB?!
I have been reading through posts, and they aren't much help when I have no idea what LAB means. :-D I looked through the glossary, but it's not there. Forum searches just take me to posts using the acronym. Can someone tell me? Thanks!
LAB = lactic acid bacteria = Lactobacillus
Either lactic acid bacteria, or Labrador. (Some people's dogs are pretty experienced at baking bread. I didn't say skilled, just experienced. ?)
These bacteria produce lactic acid as part of their life cycle. Lactic acid is the "sour" in sourdough.
