Bagel happy dance!
Made from Hamelman recipe in Bread, without boards. So good--and so easy! Only made half the recipe as I've had a number of disappointments (with other recipes) recently. Plan to make again for Tuesday lunch...

Another batch id proofing overnight in fridge. Can't believe how eastpy these are. Another bake or two and it'll be time to work on baguettes again. (Challah I do just about every week.)
Thanks, all, for the affirmation! I do have a question--these were baked using convection, with stone on middle rack, 4" clearance on all sides. Why would the color be so uneven? The deeper color was on the left side of each bagel.
