White flour 1000 g

Water 1100 g

Levain 200 g

Salt 30 g

Sugar 30 g

Oil 50 g

Yeast 10 g

Great flavor and crispy crust :-)

Mix about 16/18 minutes. Autolysis 10 hours with a little salt all flour and 95% water. To handle I used flour and spatula, Not simple but possible :-)
