Hi CountryBoy, When you making "Stollen you soak the candid fruit in rum , whisky or any other alcohol.You do put only as much alcohol just make the fruit wet not drown the fruit, and you can let them soak over night.At the morning you put the fruit in the dough, you do not drain the fruit.The fruit just take as much as it need and you do not need to drain them.
