Today I managed to find some rye and wheat berries at my local bulk food store (often this is not available). I have some hard spring wheat berries and rye.

I am bit wary of grains from here as in the past kibbled wheat and rye have been infested with weevils :(. I would like to sprout this and then grind it into flour myself. 

Question 1:  can I freeze the grain to rid it of anything creepy crawly and will it then sprout? or will the freezing destroy the kernal growth point?

Question 2:  Once I sprout and dry the grain, how long can I store it in a dry environment before grinding it? or do I need to grind and use it within a day or so?

All help appreciated.

Leslie,  yes you can freeze it then store it,  or you can put it in a sealed container with dry ice -  here are some other options  http://bulknaturalfoods.com/articles/wheat-storage/.

Sorry,  I don't know the answer to your second question,  I usually sprout, then dehydrate and grind pretty quickly.  Once I grind it, I store the flour in the freezer,  I assume its shelf life in the freezer is quite long, but not sure exactly how long.

interesting article, unfortunately I have only 1 kg of each grain and it is not presealed.
