Olive loaf

Here is a nice olive loaf I just did, Taste great and made a nice sandwich, but I could have used more olives.

I'm totally new to the site and to bread baking. Actually tomorrow I'm beginning my first course in bread baking and hope I can one day bake an olive bread, which my family loves very much. This loaf looks absolutely amazing and must be just delicious! Could you share the recipe? thanks for sharing the photo.

water 25 g

well fed start 75 g

bread flour 506

Mix and let rest and feed for 12 + hours

Main dough

120g  start

400 g water

120g whole wheat flour

450g bread flour

mix well do a autolyse for 20-30 minutes

the add 14g salt.

120 g or more if you like of Kalamata olives.

mix 2 minutes on second speed rest 5 minutes mix 2 more minutes second speed. let rest floor time 1 hour do a stretch and fold x 3 every 1/2 hour.

This dough really benefits for a cold fermentation. so after the third fold place in the fridge 8-12 hours. take out and let warm then form into the loaves, raise and bake 500 degrees in a dutch oven combo cooker, after bread is in oven drop the temp to 450, remove the lid after 15 minutes and finish baking. Enjoy
