First of all, thank you Trevor! for giving me some tips and good directions!

I've tried Champlain sourdough at Sat and Sun. I found the video "Champlain sourdough recipe" by Trevor Wilson and was very impressed by his method. I had some questions and problems. When I asked him, his response is always very quick and precise.

I've baked this bread 2 times, the first at Sat and the second at Sun. The first try was defintely under-proofed and the second try ( Pics I up here.) seems to have a good oven-spring but there are big 3 holes in the crumb:( However, its subtle sourness is really good and I like the texture. It's very dufficult to judge when the dough is ready to bake. I did test "poking dough" several times and just got confused!! I did 7times stretch and fold and proofing time was 4hours.
