Just made 15 loaves of 70% extraction, 10 100% WW and some white flour for fun - 

I spent the day with my master baker mentor #Anomarel Ogen taking over one of his students' bakeries to hone my

knowledge and skills.

Alan Scott Artisan size oven is under way.

I shipped in firebrick from the USA as well as heat insulating concrete.

Looking to strat small and build from there - aiming for an honest and consitant product which can be tailored for

community and then broader needs.
