Struan and Sourdough Pancakes

I made Struan for the first time today, and it turned out very good. My wife who does not usually like my bread, loved it. I made one change in the recipe, because I didn't have any wheat bran. It still seemed to be very good without it. Anyone know how this affects the final product? Should I try it again with the bran?

I made sourdough pancakes this morning, from a recipe I found here @ The Fresh Loaf. http://www.thefreshloaf.com/node/182/we-had-sourdough-hotcakes This was the second time I have made them, and added 3 ingredients to this batch. 1/2 cup cornmeal added to 1 cup boiling water and 1/2 cup butter milk. It turned out to be very good also. If anyone tries this, please let me know what you think.

I think the bran is in Struan just to make it a bit nuttier and more substantial. You could replace a half cup of the AP flour with whole wheat flour to get the same effect.

I had a suspicion that was the case, but I did not know. Next time I have a question, I will ask here, before I bake.
