Oregon strawberries are in season, so this morning I whipped up a batch of fresh strawberry freezer jam and a couple loaves of whole wheat bread. Hard to beat.

Love strawberry freezer jam!  It tastes just like fresh berries, and is especially good in the dead of winter.  Yours looks delicious!

The jam is:
4 cups mashed strawberries 1 1/3 cup sugar 2 tablespoons lemon juice 1 small packet no-cook pectin
It isn't cooked, so you can't can it. But you can eat it in a week or two or freeze it for quite a while. It is incredibly good.

A few weeks back I went shopping for containers to keep my starters in and was in the canning section of a store thinking "This looks like it could be fun too".  After all, I got a garden.

Then reality hit me, and I realized the last thing I need is to take up yet ANOTHER hobby.  My poor wife lost half her kitchen to my baking space requirements as it is. 

Anyways, thank you for this recipe.  I will most definately be trying it out, since I dont have to actually cook it like normal canning.

I see you use jam like I do, LOTS....

Floyd, that is making me drool - you have no idea.  Thank you so much for showing us this recipe.  I had no idea one could make jam without actually canning it.  Will give it a try for sure.  That color is outstanding and I'll bet it was absolutely delicious with that beautiful fresh bread.  Wow.

Also, Ball makes these cool plastic freezer jam jars.  The tops screw on and they seal really, really tightly.  I actually use them for lots of things--you can always use small jars like that!
