Today's Bake - Potato Bread
My stove oven is finally fixed and working again after 10 days without it! First bake for 2013 - potato bread from the Tassajara Recipe Book. We had leftover mashed potatoes that morphed into this bread, a light airy loaf ready for toasting as part of tomorrow's breakfast. I tested out the Brod and Taylor proofer I got for Christmas and it works like a dream, especially good during the colder winter months.

you are back in baking business with the oven fixed. The proofer will sure make baking easier for you in the winter. We sure like potato in breads and your fine looking example is perfectly browned by a fine working oven.

The potato bread is delicious. I like the richness of it and the soft crumb. I think my oven was trying to tell me it was suffering when it didn't brown the sourdoughs I baked about a week before it 'blew a gasket' self-cleaning. The repairman told me to NOT use the self clean cycle and go with an oven cleaner like Easy-off instead. I will take his advise to heart as my sister gave me the same info after the oven died.
like my apprentice does, you have to keep her from self cleaning the oven every day! Easy off and hand cleaning a dirty oven is quite a chore though.
What a wonderful shine on the crust. Did you use some sort of wash on it? Love to see the inside if you have a chance. -Varda
Thank you, Varda. Eggwash of one egg and 1 TBSP water was brushed on the loaf before baking. I did have to shield the loaf with aluminum foil for the last 10 minutes of the bake to prevent overbrowning.
Luckily there is still half a loaf left - Here's a photo of the loaf's inside crumb.

It must feel good to have your oven back - especially when a gorgeous loaf like that emerges!
Isn't the B&T Proofer a wonderful tool to have? I waited awhile to get one, and now I wonder what I'd do without it.

Thank you for your kind words. Yes I am really happy to have my oven back. Now I'm dreaming about baguettes. The B&T Proofer is great! I don't have to guess about proofing temps anymore, and hopefully will get more consistent results.
