Back in the Saddle with Vermont Sourdough with Whole Wheat
I've been absent from TFL for about a month. I had a rotator cuff injury that kept me out of the kitchen. Then a couple busy weekends. So I've only baked once or twice in the last 5 weeks, and didn't take any photos.
This weekend, we were home and I had time to bake. I decided to try Hamelman's Vermont Sourdough with Whole Wheat for the first time. A very nice bread. As you can see, I baked boldly. Thick crust and tender crumb. Very wheaty flavor. It would be a good base for a seed bread.
I made one batard and one boule. The boule decided to expand asymmetrically, likely due to my uneven scoring.
I hope to get back to more baking and blogging.

dark bread you baked isn't burnt at all and about the best tasting crust you ever had :-) I say 'let's boldly bake where bakers have not ventured forth before!' That crumb is also great and I think seeded breads will be popping up all over TFL as soon as Fall takes a good hold on us bread bakers. Hope your injury heals well and quickly. Missed your posts Glenn.
Nice baking and .....Bake on!
Thanks, DBM. The crust is just how I like it. A bit of carbon flavor infusing the crumb.

Great looking loaf, Glenn.
I hope you have a quick and smooth recovery.

You are too kind. I don't think they're real pretty loaves. I experimented with a different scoring pattern on the boule, and it decided it wanted to be un-round. It had personality, I guess. Tastes good, though.
Good to be back.
Thanks.

Nice looking bread Glenn. What caused the rotator cuff injury? Haven't heard of that outside of swimming circles. You a swimmer then, or have you being flingin' too much to the counter? If you are interested in some rehabilitive techniques go to the United States Masters Swimming (USMS) site and do a search on "rotator cuff". You should find a lot of good stuff there.
Best,
Syd
Thanks, Syd. I am not a regular swimmer, just old and out of shape. My doctor says it's a common injury. For people who have desk jobs (among others), the shoulder can get out of shape, leading to what's called "impingement syndrome". I got a shot of cortisone (performance-enhancing drugs) and, after a few sessions of physical therapy and a few weeks of exercises, the shoulder is at 95% range of motion and much stronger.

Hi Glenn,
Glad you are back to baking again and 100% recovered - bread looks lovely, especially your scoring on the boule -
love how that turned out!
Best wishes,

...it's abstract. Thanks for the comment. Glad to be back at the oven.

I am loving that crust, Glenn. I look forward to seeing what seedy combinations you come up with!

I have lots of pumpkin and sunflower seeds. Maybe next week.
