I need Unique Pastry Ideas
I am working at a small bakery and we are expanding into wholesale accounts. One that we want in particular keeps asking us for a unique pastry, something customers can only get at this spot. I have a few ideas but was wondering what else is out there.
Does anyone have any good ideas for a pastry ideas that are unique? Can be anything from laminated pastries to muffins to yeast-leavened pastries. Use your imagination.

I love waffles, I really do. I think they're just about the coolest thing on earth.
You could make thick waffles and then stuff them with something from some sort of cream (boston cream waffles, bavarian cream waffles, devonshire cream waffles) or other filling like fruit or maybe bacon, then top them with something like chocolate or maple that hardens or at least won't drip off.
Bacon-stuffed waffles topped with buttermilk syrup that's thickened to have the consistency of a soft caramel.
Waffles are always a breakfast food and served with syrup or whipped cream and other toppings. However, at their core they're just as versatile as any crisp flatbread. They're perfect pastries.
Indeed you have conjured up tastiness in my mind. I will hold onto this idea. I am looking for something more stable, as we are delivering to a coffee shop.

moist brownie, cut in 2" squares, enrobe in ganache and then cover one side in chocolate shavings. We also split the brownies in half and put mocha ice cream in the middle making a sandwich, enrobe the sandwich in ganache - but have never put chocolate shavings on top of those. But I soon will!
Chocolate anything sells well and is enjoyed by most everyone.
