bagels: can you freeze after boiling?
Has anyone out there tried freezing bagels after boiling but before baking? I have to make brunch for 50 on the morning of my sister's wedding and really want everything to be as fresh as possible. The general plan would be to thaw them in the fridge the night before and then bake them in the morning. Unfortunately I just thought of this possibility and don't have time to experiment before the actual event. Thanks in advance for any suggestions!

I have frozen the bagels after forming and resting for a few minutes with quite good success. I take them out when i get up and get the water ready for boiling, then boil and bake them. I have seen no difference that way. Good luck!
Thanks for the response, but I'm afraid that I won't have the time to boil them before brunch b/c I will have a lot of other cooking to do. That's why I was wondering if I could boil them and then freeze them ahead of time so that the only thing left to be done would be the baking.

Hey Summer, I had recently been wondering the same thing and stumbled across this admittedly old post. Have you tried boiling the dough, then freezing, then thawing and baking?
