Thanks so much, holds and Paddy. I'm actually eating the last slice of the two loaves right now (I could cry), spread with cream cheese and kalamata olives. So chewy, light and crispy, it's worth the late night indulgence. lol
Can't think of a more fitting end for the final slice. Life is gooood...and best of all you have your photos to remind you of how lovely they were.
Don't know if you're interested or maybe you're already doing this, but one thing I've found helpful is I set up a file folder in My Documents/My Pictures (I use Microsoft's Digital Image Pro but you can use any photo software application) labeled Bread Baking Sessions with sub-folders containing titles and dates (i.e. Ciabatta - 2-19-08) for each bread I bake, where I save a few photos of each of my bread baking sessions for later reference.

YES, it was a fitting end to my yummy loaves. My sig other went looking for it this morning and was severely disappointed that I did not cut the last slice (probably about 1/2 inch!) in half..LOL
That said, I save all photos of the breads, cakes, cookies, pastries etc..that I bake, in personal folders and on Flickr. If I can't repeat any initial successes, I can always look back. However, I think Craig's recipe is pretty foolproof if followed to a T, so I'm looking forward to making another two loaves in the near future.
I really wanted to get the 'sheen' around some of the holes, so I took a photo of some slices in a different room, using the flash. It didn't exactly work, but I'm a terrible photographer, and my digi-cam isn't exactly first rate. However, I think you can see a little bit of sheen around some of the holes.
